What is Mambo sauce?
Mambo sauce is a chicken wing sauce originated and popularized in Washington D.C. You can find many variations of the sauce in carryouts and restaurants throughout the area, with creators vying to formulate their own interpretation of what it should taste like. As such, mambo sauce has become deeply ingrained in the culture of D.C., becoming more than just a simple condiment.

It all began in a carryout, Joy’s Kitchen, in Oxon Hill, Md, right on the border of Southeast DC. There, Joy set out on a quest to concoct his own version of the renowned Mambo sauce. He strived to create something that would set itself apart from all the other sauces, something original that would take the taste to the next level.
In early 2002, after countless revisions and improvements, “Joy’s Mambo Sauce” was born.
